Balsamic vinegar makes this deliciously different succotash. You may want to add more to your liking! Ingredients:
2 tablespoons butter |
1 cup chopped yellow onion |
1 garlic clove, minced |
2 cups frozen corn kernels |
1/2 cup chopped red bell pepper |
1 teaspoon dried basil |
1 (10-ounce) package frozen baby lima beans |
1/2 cup fat-free, less-sodium chicken broth or vegetable broth for vegetarian recipe |
1/2 teaspoon sugar |
1/2 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
1 tablespoon balsamic vinegar |
Directions:
1. Melt butter in a large nonstick skillet over medium heat. 2. Add onion and garlic; cook 3 minutes or until onion softens, stirring occasionally. 3. Add corn, bell pepper, basil, and beans; cook 4 minutes, stirring 4. occasionally. 5. Add broth, sugar, salt, and black pepper; cook 7 minutes 6. or until liquid almost evaporates. 7. Remove from heat, and stir in vinegar. |
