Balsamic vinegar makes this deliciously different succotash. You may want to add more to your liking!
Ingredients:
2 tablespoons butter
1 cup chopped yellow onion
1 garlic clove, minced
2 cups frozen corn kernels
1/2 cup chopped red bell pepper
1 teaspoon dried basil
1 (10-ounce) package frozen baby lima beans
1/2 cup fat-free, less-sodium chicken broth or vegetable broth for vegetarian recipe
1/2 teaspoon sugar
1/2 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 tablespoon balsamic vinegar
Directions:
1. Melt butter in a large nonstick skillet over medium heat.
2. Add onion and garlic; cook 3 minutes or until onion softens, stirring occasionally.
3. Add corn, bell pepper, basil, and beans; cook 4 minutes, stirring
4. occasionally.
5. Add broth, sugar, salt, and black pepper; cook 7 minutes
6. or until liquid almost evaporates.
7. Remove from heat, and stir in vinegar.
