BALSAMIC ROASTED POTATO WEDGES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Maxwell Estate in Grand Prairie, Texas in 1981. Ingredients:
4 large yellow fleshed potatoes scrubbed well |
2-1/2 tablespoons extra virgin olive oil |
1 teaspoon kosher salt |
1/4 teaspoon freshly ground black pepper |
2-1/2 tablespoons balsamic vinegar |
Directions:
1. Put oven rack in lower third of oven and preheat oven to 450 then halve each potato lengthwise. 2. Cut each half lengthwise into 4 wedges then toss with oil, salt and pepper. 3. Place in shallow baking pan and arrange in 1 layer. Roast potatoes turning once for 20 minutes. 4. Sprinkle with vinegar shaking pan to distribute vinegar evenly then roast 3 minutes. |
