Balsamic & Roasted Garlic Vinaigrette |

A great vinaigrette to top your salad, or as a marinade for grilled vegetables. Ingredients:
6 garlic cloves |
1/2 cup balsamic vinegar |
1 1/2 teaspoons dijon mustard |
3/4 cup olive oil |
salt and pepper |
Directions:
1. Roast garlic at 350 degrees until soft, golden brown and fragrant - about 30 minutes. 2. Peel cloves and mash coarsely in a mixing bowl. 3. Add the vinegar and mustard, whisking to incorporate. 4. Whisk in the olive oil. 5. Season with salt and pepper. 6. Refrigerate at least 1 hour. |
