This butternut squash is so tasty you can't eat just a little. It makes a great side dish for pork. Ingredients:
2 large butternut squash |
1/4 c. olive oil |
1/4 balsamic vinegar |
2 cloves minced garlic |
1/2 t. red pepper flakes |
salt |
pepper |
Directions:
1. Peel squash and cut in 1 in. cubes. 2. Toss with other ingredients. 3. Roast at 375 in preheated oven till soft and carmelized. |
