Ingredients:
2 cups sweet onions, thinly sliced
3/4 cup balsamic vinegar
1 tablespoon brown sugar
Directions:
1. Place onions, balsamic vinegar and brown sugar in a 2 quart non-reactive pot with tall sides on medium-high heat.
2. Bring to a boil, stirring constantly.
3. Immediately reduce heat to low, cover and simmer (stirring occasionally) until thickened and marmalade-like. About 1 hour.
