Balsamic Onion and Cheese Picks

From . I love onions in balsamic vinegar.
Ingredients:
1 1/2 lbs white pearl onions
1/3 cup olive oil
1/4 cup balsamic vinegar
salt and pepper
3/4 lb italian fontina cheese, cut in cubes
Directions:
1. Preheat oven to 375 degrees F.
2. Blanch onions in boiling, salted water for 30 seconds; drain.
3. Slice off the root end and peel the onions by pressing them slightly between your fingers.
4. Whisk together oil, vinegar, salt and pepper.
5. Put onions in roasting pan, cover with oil mixture and toss to coat well.
6. Bake until tender (about 25 minutes).
7. Remove from oven and let cool in pan.
8. Taste and adjust seasoning.
9. To serve place 2 onions on cocoktail skewer with cheese cube.
