Balsamic Mushrooms With Lime |

My DH loves anything with nuts added. Needless to say this salad went down very well! This is a very quick & easy dish to prepare and serve, great just as a salad type dish or with steamed rice as a side dish. Ingredients:
1 cup walnut halves, chopped |
1/3 cup olive oil |
2 garlic cloves, crushed |
1 small red chili pepper, deseeded & finely chopped |
500 g button mushrooms, trimmed |
2 teaspoons brown sugar |
1 tablespoon balsamic vinegar |
2 tablespoons lime juice |
1 tablespoon parsley, finely choped |
steamed jasmine rice (optional) |
Directions:
1. Heat a wok or frypan over high heat. Add the walnuts & cook, stirring. 2. constantly, for 2-3 minutes or until hot. Remove & set aside. 3. Add the oil, garlic & chilli to the wok & stir-fry for 30 seconds. Add. 4. the mushrooms & stir-fry for 2-3 minutes or until the mushrooms. 5. are just tender. 6. Combine the balsamic vinegar & brown sugar together & add to the mushrooms, stir-fry 30 seconds or until well coated. 7. Remove wok from the heat, stir in the walnuts & lime juice. 8. Garnish with parsley. 9. Serve with on its own or with steamed jasmine rice. |
