We tested this recipe with light and regular balsamic vinaigrette. Our taste-testing panel preferred the full flavor of the regular dressing. Ingredients:
1/4 cup balsamic vinaigrette |
2 tablespoons chopped fresh basil |
1 garlic clove, minced |
4 medium yellow squash (about |
1 1/4 pounds), each cut in half lengthwise |
cooking spray |
1/4 teaspoon salt |
1/8 teaspoon freshly ground black pepper |
Directions:
1. Combine first 3 ingredients in a large zip-top plastic bag. Add squash; seal bag, and let stand 1 hour, turning bag occasionally. 2. Prepare grill. 3. Remove squash from bag, reserving marinade. Place squash on grill rack coated with cooking spray; cover and grill 4 to 6 minutes on each side or until squash is tender. Place squash on a serving platter; sprinkle with salt and pepper. Drizzle with reserved marinade. |
