2 pounds parsnips, halved and cut into 1-inch pieces |
2 medium onions, halved and sliced |
1/4 cup packed brown sugar |
1/4 cup olive oil |
1/4 cup balsamic vinegar |
1/2 teaspoon salt |
1/2 teaspoon pepper |
Directions:
1. Preheat oven to 425°. In a large bowl, combine all ingredients. Transfer to a greased 15x10x1-in. baking pan. 2. Cover and bake 35 minutes. Uncover; bake 5-10 minutes or until tender. Yield: 4 servings. |
