Balsamic Glazed Grilled Radicchio |

I love grilled lettuce. Recipe adapted from Chef Laurent Tourondel, BLT NYC, specializing in New American Bistro cooking. Found in Mens Health. Ingredients:
1/2 cup fresh lemon juice |
1/2 teaspoon crushed red pepper flakes |
1/2 cup balsamic vinegar |
salt & freshly ground black pepper |
1 cup extra virgin olive oil |
2 tablespoons honey |
1 medium head radicchio, cut into 6 wedges leaving the core intact |
Directions:
1. Combine lemon juice, red pepper flakes, balsamic vinegar, salt and pepper to taste, olive oil, and honey to form a marinade. 2. Place radicchio in a shallow baking dish and pour marinade over top; marinate 15 minutes. 3. Remove wedges from marinade, reserving marinade. 4. Grill radicchio until on each cut side, about 1 or 2 minutes; place on serving platter. 5. Drizzle reserved marinade over radicchio and serve. |
