Balsamic Chicken with Thyme |

Chicken with balsamic sauce and onions. great over egg noodles. Ingredients:
0.24 cup flour |
3/4 tsp salt |
3/4 tsp pepper |
2 chicken breast, meat only - divided so you have 4 halves |
2 tbs olive oil |
1 large red onion, cut in half and then sliced |
1 cup fat free chicken broth |
2 tbs balsamic vinegar |
2 tsp fresh thyme or 1/2 tsp dried |
Directions:
1. mix flour and s1/2 tsp each salt & pepper add chicken and coat. 2. Heat oil in heavy skillet, med heat, add chicken and cook turning once for 10 minutes until browned and cooked through. remove to plate, cover to keep warm. 3. Add onion to skillet and saute 1-2 min until lightly browned. Add broth, vinegar, thyme and remaining salt & pepper. Bring to boil and cook, stiring often, 7 minutes or until onions are soft and sauce is syrupy. Spoon over chicken and serve. |
