My wife and I were traveling through Old Quebec and ordered a version of this at a roadside diner. WOW...we just about fell over from the first bite. Robin said she could copy this at home...we had no idea what to use for flavoring the chicken until she suggested Balsamic Dressing...and this is the wonderful result. So easy and good. A quick change of pace. The great thing about this recipe is that all the prep can be done in the time it takes to cook the chicken. Fast and good. Ingredients:
2 -4 boneless skinless chicken breasts |
1/2-3/4 cup of balsamic salad dressing |
lettuce |
onion |
salsa |
guacamole |
sour cream |
tortilla chips |
Directions:
1. cut the chicken into bite sized pieces and cook in pan with the dressing till done. 2. chicken should have absorbed the dressing. 3. place lettuce on plate. (use dinner plates or a huge serving platter, your choice.). 4. place tortilla chips around the lettuce. 5. place cooked chicken on lettuce. 6. have salsa, onions, guacamole on the side (or use any of your favorite toppings- the only limit is your imagination.). |
