Rotisserie chicken mixed with pasta of your choice and a parm, evoo, balsamic blend dressing. Ingredients:
12 ounces whole wheat fettuccine |
24 ounces roasted whole chicken, cooked and cubed |
2 cups tomatoes, chopped |
1/2 cup red onion, chopped |
2 servings bacon |
1/2 cup italian cheese blend |
4 servings extra virgin olive oil |
1/4 cup fresh basil, minced |
1/4 cup balsamic vinegar |
2 tbls brown sugar |
1 tsp garlic, minced |
1/4 tsp salt |
1/4 tsp pepper |
Directions:
1. Cook pasta, drain & rinse in cold water. Transfer to a bowl. Add the chicken, tomatoes, onion, bacon, and half of the cheese. 2. In a small bowl, wisk the oil, basil, vinegar, brown sugar, garlic, salt & pepper. Drizzle over salad and toss to coat. Sprinkle with remaining cheese. |
