Balsamic and Sugar Roasted Carrots |

Great with casseroles or a roast. Toss the carrots with arugula, feta and a drizzle of olive oil for a satisfying warm salad. Ingredients:
1 1/4 lbs carrots, peeled and halved lengthways |
2 tablespoons olive oil |
2 tablespoons balsamic vinegar |
2 teaspoons light brown sugar |
Directions:
1. Heat the oven to 350°F. 2. Cook the carrots in boiling water for 10-15 minutes until they are starting to soften, but still have some bite. Drain and pat dry. 3. Spread the carrots out in a roasting tin, drizzle with the oil and vinegar, then sprinkle over the sugar. 4. Season well with sea salt and black pepper then roast for about 45 minutes, turning occasionally until the sugar has caramelized and the carrots are soft and tender. |
