I just tried this for the first time today and it was delicious. I bought it at Trader Joe's (because the sample was so good). I added half a can of tuna to it & loved it. But at $3.99 for an 8 oz container, it's not something I'm going to buy very often. Read more . Luckily, it's super easy to make! And healthy. And filling. And easy to make into a complete meal that the meateaters will like, and that won't heat up the kitchen. (I could go on ...) Ingredients:
1 can (15 oz) chickpeas/garbanzo beans, drained and rinsed |
1 can (15 oz) black beans, drained and rinsed |
1 small red onion, chopped or 1/4 cup scallions, sliced |
1 clove garlic, finely minced |
1/3 cup fresh parsley, chopped |
2 t fresh mint, chopped |
3/4 cup tomatoes chopped |
1/4 cup extra virgin olive oil |
2 t lemon juice or cider vinegar |
good pinch sea salt |
black pepper to taste |
1 small cucumber, chopped (optional) |
2 oz feta, crumbled (optional) |
1 can (5 oz) solid white tuna, drained and flaked (optional) |
Directions:
1. Put rinsed and drained beans into a large mixing bowl. Toss, very gently, with the remaining ingredients. Let stand about a half hour before serving. The optional ingredients are not authentic - I just think any or all of them would be good with it. |
