Gail Kelly Robards, owner of the now-closed Muffins Etc., shares one of the most requested recipes since she and her brother sold their business. Ingredients:
2 cups all-purpose flour |
1/2 cup sugar |
2 1/2 teaspoons baking powder |
1 tablespoon instant espresso coffee powder |
1/2 teaspoon salt |
1 teaspoon cinnamon |
1 cup milk |
1/2 cup vegetable oil |
1 egg, lightly beaten |
1 teaspoon vanilla |
1 cup semisweet chocolate chips |
Directions:
1. INSTRUCTIONS 2. Preheat oven to 375 degrees. 3. Grease a 12-cup muffin pan. 4. In a large bowl, stir together flour, sugar, baking powder, espresso powder, salt and cinnamon. 5. In another bowl, stir together milk, oil, egg and vanilla until blended. 6. Make a well in the center of the dry ingredients. 7. Add milk mixture and stir just to combine. 8. Stir in chocolate chips. 9. Spoon batter into prepared muffin cups 10. . Bake 15 to 20 minutes or until a cake tester inserted into a muffin comes out clean. 11. Remove muffin tin to wire rack and cool 5 minutes before removing muffins from cups. |
