Baker - Tomato, Basil, and Barley Soup |

Great easy to make soup. Best with garden fresh tomatoes and basil Ingredients:
4 tbsp butter |
2 medium sweet onions, coarse chopped |
1 quart water |
1 quart chicken stock |
8 medium tomatoes |
31 oz tomato sauce |
1 cup barley |
4 cloves minced garlic |
1/2 cup chopped basil |
Directions:
1. Melt butter in a large pot and add the onions. Cook over low heat until the onions are soft and golden. Add the garlic and cook about a minute. Add the rest of the ingredients and bring to a low boil. Reduce heat to low and simmer 1 to 1- 1/2 hours or until the barley is soft. Add salt and pepper to taste. Suggest serving with a crusty bread like a baguette. |
