4 medium zucchini |
1 1/2 tablespoons olive oil |
salt & freshly ground black pepper |
2 teaspoons chopped fresh lemon thyme |
2 teaspoons chopped fresh oregano |
1/4 cup freshly grated parmesan cheese |
Directions:
1. Preheat oven to 350. 2. Split zucchini in half and arrange cut side up, on a large sheet of heavy duty aluminum foil. 3. Sprinkle with oil, salt and pepper, herbs and cheese. 4. Fold up all four sides of the foil into a packet and crimp edges. 5. Bake for 35 minutes or until zucchini is tender. |
