Baked Zucchini With Lemon Thyme

Ingredients:
4 medium zucchini
1 1/2 tablespoons olive oil
salt & freshly ground black pepper
2 teaspoons chopped fresh lemon thyme
2 teaspoons chopped fresh oregano
1/4 cup freshly grated parmesan cheese
Directions:
1. Preheat oven to 350.
2. Split zucchini in half and arrange cut side up, on a large sheet of heavy duty aluminum foil.
3. Sprinkle with oil, salt and pepper, herbs and cheese.
4. Fold up all four sides of the foil into a packet and crimp edges.
5. Bake for 35 minutes or until zucchini is tender.
