Baked Zucchini With Bacon And Cornbread |

Serve this with chicken,ribs,whatever you like,.really tasty. Ingredients:
6 bacon slices |
1 medium onion,chopped. |
1/2 red bell pepper,chopped. |
1/2 green bell pepper,chopped. |
3 celery ribs,chpped. |
2 garlic cloves,minced. |
1 pkg. cornbread stuffing mix. |
1 cup of milk. |
3 large zucchini,shredded. |
1 large egg,lightly beaten. |
1/2 cup chedder cheese,shredded (or pepper-jack good in this as well) |
Directions:
1. Cook bacon on a large skillet till crisp. 2. Remve bacon,reserve 2 tsp. drippings in skillet. 3. Crumble the bacon,set aside. 4. Saute' onion and the next 4 ingrediants in the reserved drippings over medium-high heat until tender. 5. Stir together the stuffing mix,seasoning packet,and milk. 6. Let stand for 10 minutes. 7. Stir in the bacon,veggies,zuchini,and egg. 8. Spoon into a lightly greased 11X7 inch baking dish. 9. Bake at 350 degrees for about 30 minutes. 10. Sprinkle with the shredded cheese. 11. Cover and bake 20 more minutes. |
