Baked Zucchini Tomato Pie |

Stolen from a blogger. Ingredients:
2 zucchini, sliced |
2 tomatoes, sliced |
6 slices cooked bacon, crumbled |
1 sprig basil, chopped |
1/2 cup mayonnaise |
1/2 cup shredded parmesan cheese |
Directions:
1. Lightly saute 2 chopped zucchinis in a dab of olive oil. Salt and pepper. 2. Cover the bottom of a pie shell with the sauteed zucchini. And cover with fresh tomato slices. 3. Mix parmesan cheese, mayo, bacon and basil:. 4. Spread over the fresh veggies. 5. Bake for 30 minutes at 350 degrees. |
