What to do with a bumper crop of zucchini? How about these zucchini squares for an appetizer or a snack or brunch with a salad. Sounds like they are great anytime. Give them a try and enjoy! Ingredients:
3 cup thinly sliced zucchini (un-peeled) |
1 cup bisquick, or similar baking mix |
1/2 to 1 cup finely chopped onion (depending on taste) |
1/2 cup grated parmesan cheese |
2 tbl parsley |
1/2 to 1 tsp. seasoned salt |
1/2 to 1 tsp. oregano |
1 dsh pepper |
1 clove finely chopped garlic |
1/2 cup vegetable oil |
4 eggs, slightly beaten |
1/2 to 3/4 tsp. salt |
Directions:
1. Mix everything together. Pour into greased 13 x 9 greased pan. Bake 25-35 minutes in 350 degree preheated oven until golden brown. Slice into squares. |
