BAKED ZUCCHINI RICE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Zimmerman Estate in Terrell, Texas in 1989. Ingredients:
2 cups sliced zucchini |
1/2 cup instant rice |
1/4 cup chopped parsley |
1/4 cup minced white onion |
1 clove garlic minced |
1/2 teaspoon salt |
3/4 cup boiling water |
3 eggs beaten |
1/2 cup milk |
1 cup grated sharp cheddar cheese |
Directions:
1. Combine zucchini, rice, parsley, onion, garlic, salt and water then cook 15 minutes. 2. Add eggs, milk and cheese the pour into square casserole dish and bake at 350 for 40 minutes. |
