We have an exchange student from the Ukraine who likes Zucchini... and I found this recipe in a little cookbook from Gooseberry Patch. It is now her favorite zucchini dish. Ingredients:
2 lbs zucchini, thinly sliced |
1 onion, thinly sliced |
1/2 cup butter, melted and divided |
2 cups shredded mozzarella cheese |
1/2 cup breadcrumbs |
1/4 cup parmesan cheese, grated |
Directions:
1. Layer zucchini and onion in a lightly greased 2 quart baking dish. 2. Drizzle with 1/4 cup butter. 3. sprinkle with mozzarella cheese. 4. In a separate bowl, combine remaining butter, bread crumbs and Parmesan cheese. 5. Sprinkle crumb mixture evenly over the top. 6. Bake uncovered at 350 degrees for 35 to 40 minutes or until zucchini in tender. |
