3/4 lb. ground turkey, sausage with casings removed |
1 medium onion, chopped |
1 medium green bell pepper, cored, seeded, and chopped |
28 oz diced tomatos, canned |
10 oz. frozen peas, thawed |
2 tbsp tomato paste |
1 tsp oregano, dried |
1 tsp dried basil |
1/2 tsp thyme, dried |
1/2 tsp fennel seeds |
1/2 tsp pepper |
12 oz. macaroni, whole wheat, cooked |
6 oz. mozzarella cheese, fat free |
Directions:
1. 350 degrees. Crumble the sausage meat into a large saucepan and brown over medium heat, stirring often, about 4 min. 2. Drain off any fat, then add the onion and green pepper. Cook, stirring often, about 3 minutes. 3. Stir in the tomatoes, peas, tomato paste, and spices. Bring to a simmer, reduce heat and cook uncovered for 5 minutes, stirring often. 4. Stir in the pasta and half the grated cheese. Spread in a 9 x 13 pan. Top evenly with the remaining cheese. 5. Bake until the cheese has melted and casserole is bubbling, about 20 minutes.Let stand 10 minutes before serving. |
