Baked Ziti Our Way

I had made a wonderful baked ziti based loosely on a zaar recipe, but it's since changed so I want to post it myself! you can sub a jar of pasta sauce plus a can of diced tomatoes instead of making the sauce for a quick meal.
Ingredients:
1 lb chicken sausage (sub sweet or hot italian sausage)
1 onion, diced
3 -4 garlic cloves, minced
1 tablespoon olive oil
28 ounces diced tomatoes
28 ounces crushed tomatoes
6 ounces tomato paste (i have left this out before it's fine)
4 ounces sliced mushrooms
1/2 cup chicken broth
1/2 cup wine
basil
oregano
salt
garlic powder
fennel seed (optional)
1 1/2 cups small curd cottage cheese
8 ounces mozzarella cheese, shredded
1 cup parmesan cheese, grated
1 lb penne, cooked al dente (should be a little undercooked)
Directions:
1. saute onion, garlic and sausage in olive oil until sausage is browned. drain if you have lots of grease (i don't because of the chicken).
2. add tomatoes, shrooms, wine, chicken broth, herbs and spices to taste.
3. simmer for about an hour (or as long as you want).
4. stir in pasta, cottage cheese, 1 cup mozzarella, 1/2 cup parmesan.
5. pour into a large greased baking dish and top with mozzarella and parmesan.
6. bake at 350 for about 30 mins, broil for the last few to really brown the cheeses and get that crust.
7. let sit 10 minutes before serving.
8. *this freezes well if you freeze before baking.
