Baked Wheat-Free Chicken Fingers

A good alternative to McD's! Make large batches and freeze.
Ingredients:
1 t rice flour
1/2 egg white
1 t water
6 oz chicken breast
3 t breadcrumbs
1 t potato flour
Directions:
1. Measure out in multiples for making a family meal or large batches. Each tender weighs about 2 oz. before breading.
2. Use appropriate wheat-free breadcrumbs; combine with potato starch flour and season with seasoning salt, Emerils, or just salt and pepper, to taste.
3. Pre-heat oven to 400. Spray cookie sheet.
4. Dredge tenders in flour, then egg, then breadcrumbs. Place on cookie sheet so that tenders are not touching. Spray tenders with cooking spray. Bake 20-25 minutes, until tenders are done - remember, rice-based breadcrumbs will not brown like wheat.
