High protein, low fat, high fiber delicious and satisfying breakfast.... Ingredients:
1 medium chopped zucchini |
1 chopped bell pepper |
2 cups spinach |
1 cup chopped mushroom |
1 chopped tomato |
1/4 cup thinly sliced vidalia onion |
1/2 cup reduced-fat feta cheese |
2/3 cup low fat cottage cheese |
1 (16 ounce) carton egg beaters egg substitute |
2 tablespoons reduced-fat parmesan cheese |
Directions:
1. Preheat oven to 375. Chop all vegetables and put in a bowl. Season with salt and pepper (or other seasoning) to taste. Add egg beaters, then feta and cottage cheese. Mix well. 2. Coat baking dish with cooking spray. Pour mixture into dish. Top with parmesan cheese. Bake for 45 minutes or until lightly brown on top. |
