1 teaspoon butter |
1/2 cup finely chopped onion |
4 sole or 4 flounder fillets |
1 cup tomato sauce |
1/2 cup dry white wine |
1/4 cup bottled clam juice |
salt and pepper |
1 teaspoon chopped parsley |
Directions:
1. Heat oven to 400. Spread butter over bottom of a shallow baking dish. 2. Sprinkle chopped onion over butter. Roll up fish, secure with toothpicks and stand them open-end down on onions. 3. In a small saucepan, combine tomato sauce, wine and clam juice. Heat to boiling. Pour over fish. 4. Bake 15 minutes or until just opaque throughout. Season with salt and pepper. Garnish with parsley before serving. |
