Baked Tomatoes, The Ultimate Side Dish |

The title says it all...I copied these from one of my favorite restaurants in Miami. It is quick and easy, and you can even get your loved ones to eat a green vegetable. These tomatoes topped with LOW FAT creamed spinach and topped with cheese are a quick and delicious side dish to any meal. Ingredients:
1 large tomato |
4 cups fresh spinach (or frozen) |
2-3 tbsp cream cheese |
2 tbsp parmesan cheese |
3 tsp garlic powder |
2 tsp onion powder |
1 tsp kosher salt, plus one |
fresh cracked pepper |
pinch paprika |
4 slice american cheese |
1 tbsp margarine |
Directions:
1. Slice tomato into four equal slices and season with salt and pepper. Set aside. In a skillet over medium heat add margarine and wilt (or defrost) spinach. Once wilted (or heated thoroughly) add garlic powder, onion powder, salt, pepper and paprika. Saute for 3-4 minutes. Add cream cheese and stir until half melted and add Parmesan cheese. Combine and turn off heat. On a greased cookie sheet, space out tomatoes evenly and top with creamed spinach. On top of spinach, place slice of American cheese and bake at 350* until cheese is melted and begins to turn brown. 2. Note: to make this recipe even quicker, use pre-made creamed spinach |
