Ingredients:
1/2 cup pitted kalamata olives, chopped |
2 teaspoons capers |
2 teaspoons olive oil |
1 teaspoon balsamic vinegar |
1/2 teaspoon lemon juice |
1 garlic clove, minced |
cooking spray |
2 (10-ounce) tomatoes, sliced in half horizontally |
Directions:
1. Preheat oven to 400°. 2. Combine first 6 ingredients. Arrange tomato halves on a baking sheet coated with cooking spray. Bake at 400° for 6 minutes. Remove from oven. Top evenly with olive mixture. Bake at 400° for 6 minutes. |
