Try this in Summer when tomatoes are at their peak. Also a good side dish for brunch. Ingredients:
2 large tomatoes |
2 tbsp dry bread crumbs |
2 cloves garlic finely chopped |
2 tbsp fresh parsley finely chopped |
2 - 3 tbsp olive oil |
salt & freshly ground pepper to taste |
Directions:
1. Preheat oven to 425*. 2. Cut tomatoes in 1/2 crosswise and put on foil lined baking sheet. cut side up. 3. Mix together crumbs, parsley and garlic and spoon over tomatoes. 4. Drizzle generously with oil. 5. bake 8 - 10 minutes til slightly browned. |
