My Grandma Smith use to make a dish very much like this for Thanksgiving. However, I did not get the recipe from her before she moved far, far away. I nabbed this one from the internet a couple of years ago, but for the life of me cannot remember where. Read more . Enjoy. Ingredients:
4 medium sweet potatoes |
3/4 c. brown sugar |
1 tsp. salt |
1/4 c. butter |
2 eggs, slightly beaten |
marshmallows |
Directions:
1. Peel, cut and cook sweet potatoes in water, 25-35 minutes. 2. Drain and mash or blend with a hand blender. 3. Mix in sugar, salt, butter and eggs. 4. Pour into an 8x8 baking dish. 5. Cook, uncovered in a 350 degree F oven for 30-35 minutes. 6. Top with marshmallows and bake for another 5 minutes or until marshmallows are lightly browned and melty. 7. Note: Don't use too many marshmallows like I did the first time and have to clean melted/charred marshmallow out of the bottom of your oven. Just a nice sprinkling will do. |
