Baked Sweet Potatoes With Candied Ginger Cream |

4 sweet potatoes or 4 yams |
4 tablespoons butter |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1 cup sour cream |
2 scallions, chopped |
1 tablespoon candied ginger, finely chopped |
Directions:
1. Preheat oven to 375. Wrap each potato in foil. With a fork, poke several holes in flesh. 2. Bake until tender, about 1 hour. 3. Slice potatoes open and insert 1 tablespoon in each. Sprinkle with salt and pepper. 4. Meanwhile, in a small bowl, mix sour cream, scallions, and candied ginger. Serve as a topping for the potatoes. |
