Baked Sweet Potatoes With Bacon And Blue Cheese |

This is an interesting way to serve sweet potatoes. The blue cheese and bacon work really well with the sweet potato flavor. Ingredients:
4 medium sweet potatoes, peeled & diced |
1/2 cup unsalted butter, melted |
6 slices bacon, cooked and crumbled |
1 cup blue cheese, crumbled |
salt & pepper to taste |
Directions:
1. Preheat oven to 350. 2. Over medium-high heat, boil the potatoes in enough water to cover until tender. 3. Drain and return to the pot, add the butter and mash; season to taste. 4. Turn the potatoes out into a large baking dish, top with blue cheese and the bacon. 5. Place in the oven until the cheese is bubbly and the potatoes are heated through. |
