Baked Sweet Potato Oatmeal Ingredients:
2 cups oatmeal |
2 tsp baking powder |
2 tsp cinnamon |
2 tbsp splenda brown sugar |
2 eggs |
1 1/2 cups light soy milk |
2 tsp vanilla extract |
1 1/2 c sweet potato |
1 tsp canola oil |
Directions:
1. Preheat oven to 350 degrees. 2. Combine oats, baking powder, cinnamon, and dark brown sugar in a large bowl and mix to blend. 3. Beat egg and egg white in a medium bowl and then add milk, vanilla, sweet potato, and canola oil, 4. Add milk mixture to oats mixture and stir well. 5. Spray a 9-inch pie pan with cooking spray. 6. Pour oats mixture into pie pan and bake in the oven for 35-40 minutes or until toothpick inserted into the center comes out clean. (Or pull out of the oven slightly undercooked, so it retains the texture of a traditional bowl of oatmeal with a slightly crunchy crust.) |
