squash dish Ingredients:
baked squash |
1/4 lb. (1 stick) margarine |
1/2 cup chopped bell pepper |
1/2 cup chopped fresh parsley |
1/2 cup chopped onion |
1/2 cup chopped green onion |
1 lb. tender summer squash, sliced 1/4-inch thick |
1 cup pecan pieces |
salt to taste |
louisiana hot sauce or ground cayenne pepper, to taste |
1 cup grated mild cheddar cheese |
1/2 cup seasoned bread crumbs |
Directions:
1. Preheat oven to 325 degrees F. In a large saucepan, melt the margarine 2. over medium heat and saute the bell pepper, parsley, onions and green 3. onions until the onions are clear. Stir in the squash and pecans and mix 4. well. Season with salt and hot sauce, then pour into a greased 9- x 5. 6-inch baking dish. Sprinkle with the chees and bread crumbs, and bake 6. for 45 minutes. |
