Baked squash-hearty enough for a meal in itself!
Ingredients:
1 lb squash
salt & pepper to taste
1 1/2 tsp flour
1 cup evaporated milk (i use regular soy milk for everything)
2 well beaten eggs (i use cage free eggs!)
1 1/2 tsp baking powder
2 tsp melted butter
1 small onion
1 cup herb stuffing mix
Directions:
1. Boil squash til tender.
2. Drain and mash.
3. Add seasoning, flour, milk and eggs.
4. Mix well, then add baking powder.
5. Pour into greased baking dish.
6. Sprinkle herb stuffing and melted butter on top.
7. Bake at 350 for 30 mins.
