Baked Spinach Parmesan Dip |

Very rich and tasty dip, but it tastes good with lower fat mayonnaise and cream cheese too. Ingredients:
1 (10 ounce) package thawed frozen chopped spinach |
1 cup mayonnaise |
1 (3 ounce) package cream cheese (i use reduced fat cream cheese) |
1 onion, peeled and minced |
1 garlic clove, minced |
1 cup grated parmesan cheese |
2 tablespoons grated parmesan cheese |
1/8 teaspoon pepper |
1/2 teaspoon paprika |
2 (2 ounce) french baguettes, thinly sliced |
Directions:
1. Squeeze spinach to remove liquid. With a mixer, beat spinach, mayonnaise, cream cheese, onion, garlic, one cup of the parmesan cheese, and pepper until thoroughly combined. 2. Mound mixture in a 3-4 cup baking dish. 3. Sprinkle evenly with 2 tablespoons of parmesan cheese and the paprika. 4. Bake in a 350 degree F. oven until hot in center and lightly browned on top, about 25 to 30 minutes. 5. Serve hot to spread on baguette slices. |
