This is from Southern Living and I think it tastes just great! Ingredients:
1 cup long-grain rice, uncooked |
2 (10 ounce) cans diced tomatoes and green chilies, undrained |
1 cup water |
1 teaspoon salt |
2/3 cup pimento stuffed olive, sliced |
1/4 cup vegetable oil |
1/2 cup chopped onion |
1 cup shredded monterey jack cheese (4 oz) |
Directions:
1. Combine all ingredients in a shallow greased 2-quart baking dish. 2. Cover and bake at 350 for 45 minutes. 3. Stir well, and bake, uncovered, 15 additional minutes or until liquid is absorbed and rice is tender. |
