Baked Spicy Citrus Chicken |

Easy, different chicken breast recipe that I like to serve with cocounut rice. I like to make this as a reminder or summer flavors during the winter months when I can't use the grill. You can use a dash of red pepper to kick it up a bit. This recipe is also great as a marinade before grilling. Just prepare the dressing mixture and marinade meat in the refrigerator 30 minutes prior to grilling. Ingredients:
1/4 cup miracle whip |
2 tablespoons frozen orange juice concentrate, thawed |
1/2 teaspoon chili powder |
1/2 teaspoon salt |
4 boneless skinless chicken breast halves, approximately 1 pound |
1/4 cup green onion, sliced |
1/4 cup slivered almonds |
Directions:
1. Preheat oven to 400 degrees F. 2. Mix dressing, juice concentrate, chili powder, and salt in a shallow dish. 3. Dip the chicken in the dressing mixture, turning to coat both sides evenly. 4. Place in a single layer in a foil-lined shallow baking pan. 5. Discard remaining dressing mixture. 6. Bake chicken 18 to 20 minutes or until chicken is cooked through. 7. Sprinkle with green onions and slivered almonds. 8. Serve with your favorite side dish and vegetable. |
