Another recipe from my friend Ms Goergie. Pumpkin pie spice gives this a wonderful balance. Ingredients:
1 (2 -3 lb) acorn squash |
1/4 teaspoon pumpkin pie spice |
2 tablespoons pineapple juice |
Directions:
1. cut squash in half (sorting of removing the lid ) scoop out pulp, and remove the seeds.Mix with pineapple and spice.Scoop back into squash. Wrap in foil and bake 350 for 1 hours Add brown sugar if desired. |
