Baked Sour Cream Potatoes |

Omit the onion is you have picky eaters. Ingredients:
4 cups peeled potatoes (cubed and cooked) |
1/2 cup chopped onion |
2 tablespoons butter |
1/4 cup breadcrumbs |
1/4 cup grated cheese |
2 beaten eggs |
1 cup sour cream |
1 teaspoon salt |
1 dash pepper |
Directions:
1. Put the prepared potatoes in a buttered 1 quart casserole. Simmer the onion in butter. Sprinkle the onion, bread crumbs and cheese over the potatoes. Combine the eggs, sour cream, salt and pepper and pour over the potatoes. Top with more grated cheese. Bake at 350° for 25-30 minutes or until thoroughly heated. |
