This comes from a little book called ABC Jiffy Cookery. I've had it for over 50 years. I haven't tried any of the recipes yet. I'm putting them here so I can find them easier. Ingredients:
1 lb fillet of sole |
salt |
2 green onions |
1/2 cup white wine |
1 tablespoon butter |
1 tablespoon flour |
1 tablespoon parsley, chopped |
1/2 cup ripe olives, sliced |
2 teaspoons lemon juice |
Directions:
1. Sprinkle fish with salt and arrange in oiled shallow baking dish. Chop onions and sprinkle over fish. Add wine and bake in 400* oven for 15 minutes. Melt butter and add flour. 2. Drain wine from fish into butter and flour mixture and cook over hot water, stirring until thickened. Add parsley, olives and lemon juice. Pour over fish. |
