Baked Snapper With Chipotle Butter |

Cooking Light Ingredients:
1/2 teaspoon ground cumin |
1/2 teaspoon paprika |
1/4 teaspoon salt |
1/4 teaspoon black pepper |
4 (6 ounce) red snapper fillets |
1 tablespoon butter, softened |
1 canned chipotle chile in adobo, finely chopped |
lemon wedge |
Directions:
1. Preheat oven to 400°. 2. Combine the first 4 ingredients; sprinkle evenly over fish; put fish on a baking sheet that has been sprayed with cooking spray. 3. Bake for 15 minutes or until fish flakes easily. 4. While fish is baking, combine butter and chile. 5. Spread butter mixture evenly over fish. 6. Serve with lemon wedges. |
