                    A filling main dish that is easily adaptable to suit your personal tastes. Recipe doubles/triples well. Use your favorite store bought or homemade tomato sauce. Ingredients: 
                    
                        
                                                1/2 cup seashell pasta  |  
                                                1 cup tomato sauce  |  
                                                1/2 cup mushrooms, diced  |  
                                                1/4 cup crumbled firm silken tofu  |  
                                                1/4 cup shredded mozzarella cheese  |  
                                                2 tablespoons grated parmesan cheese  |  
                                                
                     
                    Directions: 
                    
                        
                            
                                1. Bring a pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. 2. Preheat oven to 400 degrees F (200 degrees C). 3. In a medium bowl combine tomato sauce, mushrooms and tofu. Stir in cooked pasta. In a separate, small bowl combine mozzarella and Parmesan cheeses. 4. In a small casserole dish layer pasta mixture and cheeses. 5. Bake in preheated oven for 30 minutes, or until lightly browned.                              |
