Ingredients:
1 (2 1/2-pound) dressed shad |
1 teaspoon salt |
1/2 teaspoon pepper |
3 tablespoons butter or margarine, melted |
lemon slices |
fresh parsley sprigs |
Directions:
1. Rinse fish thoroughly in cold water; pat dry. Sprinkle fish with salt and pepper; place fish in a well-greased 12- x 8- x 2- inch baking dish. Pour butter over fish. 2. Bake, uncovered, at 400° for 25 minutes or until fish flakes easily when tested with a fork. Transfer fish to a warm serving platter; garnish with lemon and parsley. Serve immediately. |
