Baked Scallops And Mushrooms |

Not only is this dish delicious but it is extremely easy to make and quick. I have made it with scallops but you can also substitute shrimp for the scallops and it was just as good. Ingredients:
1/2 cup butter |
2 cups thinly sliced mushrooms |
1 medium onion, finely chopped |
4 cloves garlic, minced |
2 pounds bay scallops |
1 cup soft bread crumbs |
1 cup finely chopped parsley |
Directions:
1. In a large skillet melt 1/4 cup of butter. 2. Saute the mushrooms until tender. 3. Add the onion and garlic and cook briefly. 4. Remove from the heat. 5. In a large bowl, combine the scallops, bread crumbs, parsley, and mushroom mixture. 6. Mix well. 7. Spoon into a 9x13 inch dish. 8. Melt the remaining 1/4 cup of butter and drizzle over the mixture in the dish. 9. Bake in a 450 degree oven for 10 minutes. |
