Baked Rice Pudding - Vegan |

Adapted from a recipe on the Soy Good soymilk package. Ingredients:
2 cups cooked rice |
2 cups soymilk |
3 tablespoons ener-g egg substitute |
4 tablespoons water |
1/2 cup sugar |
1 teaspoon cinnamon |
1/4 teaspoon nutmeg |
1/4 teaspoon ginger |
1 teaspoon vanilla |
1 pinch salt |
Directions:
1. Mix all ingredients in a bowl pour into a cake pan or casserole dish. 2. Bake at 350 for 1 hour or until knife inserted comes out clean. |
