Very simple recipe for homemade rice pudding. Ingredients:
2 cups milk |
3 slightly beaten eggs |
1/2 cup sugar |
1/2 tsp. salt |
1 3/4 - 2 cups cooked rice (unsalted) |
1 tsp. vanilla |
1/3 - 1/2 cup raisins (optional) |
for creamier pudding use less rice. |
Directions:
1. Preheat oven to 325. 2. Combine milk, eggs sugar, vanilla and salt. Mix well. 3. Add cooked rice and raisins (optional). 4. Turn into 10x6x1 3/4 baking dish. 5. Bake uncovered, for 30 minutes, stir. 6. Sprinkle with nutmeg if desired. 7. Continue baking til knife inserted halfway comes out clean, about 30 minutes more. |
