2 cups cooked brown rice |
2 cups vanilla rice milk such as rice dream |
1 1/2 teaspoons cinnamon |
3 tablespoons whole wheat pastry flour |
1 teaspoon vanilla extract |
2 tablespoons (salted) almond butter |
1/4 cup almonds, chopped |
Directions:
1. Preheat oven to 400°. 2. Place rice in a mixing bowl. Using a wooden spoon, break up any clumps of rice. 3. In a blender or food processor blend together rice milk, cinnamon, flour, vanilla, and almond butter. 4. Pour wet mixture into the rice and mix well. Transfer to a baking dish and bake for 45 minutes. 5. Remove from the oven and allow to cool for a few minutes. Serve with almonds. |
